Ruth's Chris Steak House Adds to Its Green Initiative

Pikesville, Md. – March 8, 2010 – Ruth’s Chris Steak House locations operated by Big Steaks Management today announced the latest additions to their green initiative in Maryland, North Carolina and New Jersey to use more eco-friendly product lines and new earth-conscious recycling processes.

What’s going green at Ruth’s Chris?

The four locations of Ruth’s Chris Steak House in Greater Baltimore, Md. are contributing cooking oils to a local sustainable fuels company, Atlantic BioFuels. The oils will be recycled into fuel-grade biodiesel. An average of 50 gallons of cooking oils are being contributed per location, per month. Of the total 200 gallons about 90% will be made into biodiesel fuel.

All participating locations of Ruth’s Chris Steak House are now using to-go boxes made of 100% compostable sugar cane; printing on to-go items with 100% water-based inks; brewing coffee from only sustainable crops; using all eco-friendly cleaning chemicals; and placing 100% post-consumer recycled mats on the floor that are made from plastic bottles and rubber tires.

Starting in 2008, each location began its green transition with simple changes, like initiating paper-recycling programs and behind-the-bar bottle/tin recycling; replacing light bulbs to save energy; and decreasing the number of day-to-day fax transmissions, which eliminated significant paper waste.

According to an article published by USAToday in May 2008, “If just 10% of restaurants replaced one incandescent light bulb with a compact fluorescent bulb, the energy savings would be $2.8 million.”

“With the sheer number of Ruth’s Chris locations we operate and with consumption levels so high, it is really important for us to find more earth-conscious ways to operate across all of our locations. We have done a lot of research, evaluation, and quality testing to assemble a green program that we can stand behind. By changing some of our basic supplies and processes we are taking one of many steps to continue preserving resources and making a positive impact on the environment.”

Sadeghi says his team is in the process of evaluating future green initiatives, including more energy efficient technologies such as wind-powered energy; enhanced recycling programs; and new methods for trash disposal.

He adds, “Starting with small changes and building up to higher-impact changes is a very manageable way to make a significant difference on the environment.”

Sadeghi also stated that the new green efforts are taking effect at the Havana Club in Baltimore, Md., which is operated by Big Steaks Management.
